Today I would like to share with you my recent discovery – a combo of velvet avocado mousse and bitter-sweet blood orange. These two go well together with mozzarella, goat or sheep milk cheese. Just blend the avocado with a spoon of wine vinegar or lemon juice (it will keep the avocado from turning brown) and season to taste with sea salt and fresh ground pepper. Serve the mousse together with slices of cheese and blood oranges, sprinkled with toasted pistachios and sprouts. Alternatively, you can try this combo with smoked salmon or trout. Cut the fish into small pieces, combine with pieces of tomato and blood orange, season to taste, serve on the avocado mousse. Bon appetit!
